Other than Dreamcast ... are there any worthy console emulators to run in an arcade cabinet?

I wouldn't throw in a full set of any console but there are lots of individual games that can work well as arcade games. Loads of early console games are just arcade ports so unless you're curious about the differences of different ports are not worth having when you have the originals. Quite a few of the 80s and 90s consoles (up to and including the Dreamcast) also had (usually timer based bootleg) JAMMA adaptors available too, so some of their games may already be in MAME as arcade gaames.

Parasol Stars (PC Engine) is definately worth having and very arcade in style and is part of the extended Bubble Bobble family. I think it may have even had a location test as an arcade cab (have heard multiple times from people in the UK they remember it as a cab) but I could be wrong... there's a bootleg timer based PC engine JAMMA system so maybe it was that.

It won't be for everyone (and is a bit weird to start a game) but I have Jumpman Jr (Colecovision) in my own cab as it was a favourite on C64. Would have made a great arcade game with just a mod to how you start the game.

I put Dr. Mario (NES) on a table for someone recently, by request. But then there's the Vs version... The NES itself is a decendant of the Galaxian hardware according to a video I saw the other night...

On MegaDrive/Genesis (possibly the most JAMMAish console in hardware design), I think M.U.S.H.A. was an arcade spinoff(?) - much like NES there were 2 JAMMA versions of this console, not sure if MUSHA was included though.

PSX also has its fair share of arcade style games. I'm sure some of them would be worth having. Anything with analog controls probably wont play great on JAMMA though (same with Dreamcast).
